Hi,
I will tell you how I done my old Pioneers.

You will need a large hard drive.
I bought a Pinnacle Dazzle Dvc 150, this captures the video and sound and can convert it into VCD quality mpg.
This had a SE version of Pinnacle studio, which is the software you need for capturing etc.

You run video and audio leads from the Laser to the Dazzle. the Dazzle is connected to the PC via USB.
When you have the software running you will see a window that previews from your source, this being the LD Player in your case.
You will have to tweak the settings in there to suit your particular setup.

Then press play on the LD player and you should be able to see that track on the preview window.
When you are happy with the quality of what you see and hear, restart your player and press RECORD within the Pinnacle Studio.
Let it run for the whole 14 or whatever tracks, you can cut them later on for the tracks and tidy them up.

When you catch up with that you will have the donkey work done, but remember your end product will only be as good as the quality of the Laser Discs.
You will get a lot of instruction re various functions on the manual of the programme itself.

I hope this will get you started, sorry I didn't do this before for you but I thought you would have got a more informed opinion elsewhere on the net

Get the Leadtek WinFast TV2000 XP Expert capture card (http://www.leadtek.com/multimedia/winfast_tv2000xp_expert_1.html). It's ~ $50 USD shipped and the capturing quality is excellent.

I am using Pinnacle Studio 9.3 for video capturing/editing and believe me, nothing can be easier & better. :)

You can then use either VCDEasy or Nero to burn. I prefer Nero, though.
