VGA all the way.
I've had VGA since launch and it's sharp as a knife.
I recently plugged an Elite in with HDMI and expected it to be better. I could actually see miniscule artifacts via HDMI and I don't get any with VGA (50" Sammy plasma).
Based on my 1 single experience I personally rate VGA the best option.
vga in my opinion to,but everyones opinion will differ:)

Sway, Danman, I believe he asked about the original Xbox not the 360.
dvdzuk, component video is the best that the original XBOX natively supported. Component cables are easy to find if you search. The console did not natively support VGA output. There were a couple aftermarket adaptors and even a firmware hack that enabled VGA but, in my opinion, the picture quality doesn't really meet true VGA output because of the up conversion process.

Assuming your plasma screen has component inputs I suggest you get the component cables.
