Find and download an auto installer like Slayer.
Install the hdd and set the jumper to cable select.
Burn the auto installer to disk then boot your xbox from it. Follow the options and it will set up the HDD for you.

you need to backup your eepom and hard drive key with configmagic and use xboxhdm to format a new hd, load your old stuff on it and lock the drive via pc then install in your xbox

Is it hard to upgrade a harddrive on a softmodded xbox

It takes about the same to time to install a chip and format the harddrive and install the software as it does to install a softmod exploit and use xboxhdm to format a new hd

Example of possible procedure
a.) install softmod and ftp a c backup,eeprom, and e backup
b.) create xboxhdm disk from c drive and eeprom only
c.) create hd from scratch using pc (booting with xboxhdm disk)
d.) lock drive
e.) install in xbox
f.) ftp e files and you can use same autoinstaller disk that you can use with a modchip
