You may be able to do it, depending on how clear the text is.
You will need some good OCR (Optical Character Recognition) software.
Most scanners are supplied with a basic OCR program, which is worth trying, but if you intend to do this a lot, you need to invest some money on a good package.

I've been using OmniPage (http://www.nuance.com/omnipage/) since version 7 and this is 1 of the best OCR software. TextBridge Pro (http://www.digitalriver.com/dr/v2/ec_MAIN.Entry16?SP=10024&PN=29&xid=19198&V1=31032858&V2=31032858&V3=1&V5=0&V4=11000365&S1=&S2=&S3=&S4=&S5=&CUR=840&DSP=0&PGRP=0&ABCODE=&CACHE_ID=196111) is a cheaper solution but not as good.
