DVD -> Mpeg4 (.avi, with either DivX, Xvid or one of the other video codecs, and MP3, or AC3 for audio- codecs may have to be downloaded separately although they're nearly all on the doom9) Try either Gordian Knot or AutoGK (both on the doom9 website in the download section)- there are tonnes of alternatives to the two i mentioned basically depends on how involved you wanna get, and if quality or speed/ compatibility is your main priority lots of useful progs and tutorials over at doom9
DVD -> (S)VCD, DVD2SVCD should do the trick but you will need additional progs such as tmpgenc
Nero has a very very quick DVD -> MP4 converter in its Nero Recode 2 sweet- quality isn't as good as say Xvid (there's a comparison of different video codecs on doom9 site), but it is basically a one click solution and quality i would say is better than VCD or SVCD- May have problems playing them though cos its a Nero Propietary video codec and i'm pretty sure it uses AAC for the audio which alot of the general media players & standalones won't play without Direct show filters/ firmware upgrades respectively

DVDx (http://www.labdv.com/dvdx/) is a pretty good freeware, m8. You can find a good download site from google.
